Savoury Butters and Quick Sauces

SAVOURY BUTTERS

Butters are quick accompaniments to serve with meat, poultry and seafood. There is no sauce to curdle or to make at the last minute, because these butter can be made a week ahead and refrigerated, or frozen for 2 months. Spoon the from a bowl, roll into logs and slice, or pipe into swirls. When placed on the hot meat they will melt almost immediately and for a sauce. Each recipe below serves 6.

Chili Coriander

Combine 125g of soft butter, 2 teaspoons of mild sweet chili sauce, 2 tablespoons of chopped fresh coriander leaves, I crushed garlic clove, 1 teaspoon of seeded mustard and 2 teaspoons of lime juice in a bowl. Serve with poultry beef pork, lamb or seafood.


Tomato Olive

Combine 125g of soft butter, 2 tablespoon of tomato paste, 2 tablespoons of chopped seeded black olives, I crushed garlic clove, and ¼ cup of grated parmesan cheese. Serve with beef, poultry, pork or veal.


Herb

Combine 125g of soft butter, 1 tablespoon chopped fresh chives, 1 tablespoon chopped fresh basil, 1 tablespoon chopped fresh oregano, 1 teaspoon chopped fresh dill and 1 teaspoon grated lemon rind. Serve with beef, poultry, lamb, pork, veal or seafood.



QUICK SAUCES

Buy a jar of good quality whole egg mayonnaise and use any of the suggested flavourings for a tasty sauce.


Aioli

Combine ½ cup of mayonnaise with 2 crushed garlic cloves. Serve as a dip or with lamb or seafood.


Tartare

Combine ½ cup of mayonnaise with 1 crushed garlic clove, 2 teaspoons of chopped drained capers , 2 teaspoons of finely chopped gherkins, 2 teaspoons of finely chopped green onions, 2 2teaspoons of chopped fresh dill. Serve with seafood.


Pesto Mayonnaise

Combine ½ cup of mayonnaise with 2 teaspoons of bottled pesto. Serve with beef, chicken, lamb or as a dip.

Boy do those steaks and butters look good! I would never think to make these but have had some in restaurants and they really do taste delicious. Will bookmark for when I have company. Thanks for the great ideas. Voted up and useful. I think they need a button for mouthwatering!

I've had them in restaurants too and never thought to make my own at home. But the do add flavour to a steak and are delicious.

These all look wonderful, and so easy! I've often made herb butters, especially in the spring when chives, tarragon, oregano, thyme, and mint are freshly sprouting, mostly to use as spreads for toasted breads. But now I can see how versatile the butter spreads are: instant sauces in and of themselves! And the mayo selections are awesome. I love a tartar sauce and usually buy it, but not the next time. Thanks for these super time-saving, fool-proof, and tasty ideas.
